The second step in making your meatball and tomato salad is preparing the dressing. Combine two tablespoons of fresh lemon juice. Then, add three tablespoons of oil, salt, and pepper into a small bowl. In another bowl, stir in 1/4 cup of plain 0 percent nonfat Greek yogurt, one tablespoon of water, chives, dill, and one teaspoon of lemon zest.
Third, toss together some arugula with the oil dressing mixture. Then, place one cup of each mixture on four plates, or in four different containers if you are meal prepping. Add in tomato slices, avocado slices, meatballs, and the yogurt mixture, and you’re all set!
